5| Cooking | Chocolate Peanut Butter Cookies (Eggless)

I didn’t think I’d be doing a recipe blog so soon but I just had to spread the word on these cookies. I baked these as a trial on Saturday and ended up baking 2 more batches on Sunday to distribute to my family. These cookies are DA BOMB! Have you watched the show “How I Met Your Mother”? There’s this episode where Lily meets Tracy in the final season while she is on a train heading for Barney and Robin’s wedding weekend. Tracy offers her cookies and they both call the cookies “Sombitches”. I’d imagine this is the recipe for those cookies!

The recipe is fairly simple and takes around 15-20mins of preparation time.

Ingredients Required (to bake 12-14 cookies):

  • Salted Butter (softened) – 1 cup
  • Peanut Butter* – 3/4 cup
  • Brown Sugar**- 2/3 cup
  • Vanilla Essence – 1 tsp
  • Fresh cream – 1/4 cup
  • Cocoa – 1/3 cup (plus 2-3 tablespoons if you want the cookie to be bitter-sweet)
  • Flour – 1 cup
  • Salt – a pinch
  • Baking soda – 1/2 tsp
  • Chocolate chunks – 1/2 cup – 1 cup (depending upon how much chocolate is too much chocolate for you)

* Use crunchy peanut butter to get that extra crunch in your cookie. **You can use half white & half brown sugar if you want a sweeter cookie. I wanted a caramel-y cookie so I used all brown sugar.

Method:

  • Whisk together the two butters and sugar to form a smooth mix. Whisk them together till the sugar is combined with the butters and there is no large chunks of butter left.
  • Add the vanilla essence and fresh cream and whip together till they ingredients are properly combined.
  • Add the flour, salt and cocoa powder to the slurry of wet ingredients and give mix them a little. Then add the baking soda and mix till the dry and wet ingredients are properly combined.

  • Throw in the chocolate chunks and give a rough mix.
  • Place the dough in the freezer for 25-30 mins. This is required since the dough is a little wet and won’t shape well till the butters are cooled.
  • While your dough is freezing, pre-heat the oven to 180 degree/355 F and grease a pan.
  • Once your dough has cooled down, shape the dough into cookie balls. Shape the cookies fast, since they will start melting again. Place the cookies in the oven and bake for 13-15mins.
These cookies turned out so so good!
  • Let the cookies cool on the baking tray before you try to remove them as they will crumble when hot. Once cooled for about an hour, place them on a plate a cool in the fridge for 1-2hours. These cookies aren’t hard but soft and chewy.

These cookies turned out so good that I baked 3 batches over the weekend and sent 2 batches to my extended family. You can also freeze the cookie dough and use it whenever you have a craving. These cookies are crunchy, caramel-y, chocolate-y and taste heavenly. I ate a few while they were still warm and I can imagine they’d taste amazing with vanilla ice cream. I’m going to try to make a giant cookie with this dough the next time I bake them (which will be pretty soon). These are so decadent – I’m also going to make an ice cream cookie sandwich with these.
